From the passDrift & Co. opened in 2017 after Mia and Tom spent a decade working in kitchens they admired but rarely recognised outside them. They wanted something smaller. Something that felt like the Mornington Peninsula actually tastes — unhurried, a little salt on everything, genuinely seasonal.
The team changes less than most. Many of the faces you'll see tonight have been here for years. That continuity matters to us, and we think it shows in the room.
